Riso Croccante con Salmone Piccante (Stampa)

Riso per sushi croccante guarnito con salmone piccante, avocado, jalapeño e semi di sesamo, per un'esperienza di sapori indimenticabile.

# Ingredienti:

→ Crispy Rice

01 - 2 cups short grain rice (sushi rice)
02 - 3 tablespoons rice vinegar
03 - 3 tablespoons granulated sugar
04 - 1 ½ teaspoon kosher salt
05 - Neutral high-heat oil, for frying

→ Spicy Salmon

06 - 1 pound sushi-grade salmon, skin removed
07 - 2 tablespoons Kewpie Mayo (or regular mayo)
08 - 2 tablespoons sriracha
09 - 1 tablespoon soy sauce
10 - 1 teaspoon toasted sesame oil, plus more for drizzling
11 - 1 stalk green onion, finely chopped

→ For Serving

12 - 1 avocado, peeled, pitted, and thinly sliced
13 - 1 jalapeño, thinly sliced
14 - Toasted white sesame seeds, for sprinkling
15 - Sweet Chili Sauce, for drizzling

# Istruzioni:

01 - Rinse and cook rice according to package instructions. Prepare sushi vinegar by whisking rice vinegar, sugar, and kosher salt in a saucepan over medium-low heat until dissolved. Pour over cooked rice and fan with a rice paddle to evenly coat.
02 - Line an 8x8-inch baking pan with plastic wrap. Press the rice gently and evenly into the pan. Cover with another piece of plastic wrap and freeze for 3 hours to firm up.
03 - Chop the salmon into ¼-inch cubes. Mix salmon with mayo, sriracha, soy sauce, sesame oil, and green onion until well combined. Cover and refrigerate until use.
04 - Slice the chilled rice into 18 rectangles. Heat oil in a skillet to ½-inch depth over medium heat. Fry rice blocks in batches until golden and crispy, about 1-2 minutes per side. Remove and let cool on a paper towel-lined plate.
05 - Top each cooled rice block with a slice of avocado, a spoonful of spicy salmon, a jalapeño slice, a drizzle of sesame oil, a drizzle of sweet chili sauce, and a sprinkle of sesame seeds. Serve immediately.

01 - Freeze rice until firm enough to cut cleanly for better frying results.
02 - Freeze fresh salmon beforehand to kill parasites and make slicing easier.
03 - Substitute Kewpie mayo with regular mayo if unavailable.
