Preheat your oven to 200°C. Wash the potatoes, cube them, and place them in a baking dish.

Drizzle 1 tablespoon of olive oil over the potatoes. Sprinkle with thyme, oregano, salt, and black pepper. Toss to coat evenly.

Place the feta block in the center of the baking dish. Press one side of the feta into the seasonings on the potatoes, then flip it over. Add the garlic head and half the lemon wedges. Drizzle the remaining olive oil over everything.

Roast in the oven for 45-55 minutes until the potatoes are crispy and golden. Remove the garlic if it browns too much after about 35 minutes.

Once the garlic is cool, squeeze the cloves out of their skins. Mash the roasted garlic into a paste. Add the paste, juice from the remaining lemon wedges, and chopped basil. Mix the potatoes and feta to combine flavors.

Drizzle honey over the top and sprinkle fresh basil for sweetness and color.
